The Dauny family has been rooted in Verdigny since 1683 and is considered one of Sancerre’s founding estates. Early adopters of organic farming (certified since 1993), they focus on meticulous vineyard work across the appellation’s classic soil types. ‘Caillottes’ refers to the shallow, stony limestone soils that yield particularly lifted, aromatic expressions of Sauvignon Blanc. Fermented in stainless steel, this cuvée is brisk and saline, with a high-acid backbone that defines Sancerre.
