Theirry Germain is one of the Loire Valley’s most prestigious and influential growers. A huge pioneer of biodynamic farming, Germain originally moved to the Loire from Bordeaux in the early 1990s, where he met his ‘spiritual godfather’ Charly Foucault (Clos Rougeard). Germain’s fruit is harvested early and aged in a combination of large foudres and demi-muids. ‘Clos de l’Ecotard’ is a bone dry Chenin vinified without any new oak. The wine is bright and precise, marked by flavors of lemon zest, green apple, sea salt, and wet rocks. Serve with fresh salads, seared scallops, or lobster rolls. Thierry’s wines are known for their clarity, precision, and insane ability to reflect terroir.
