Palmento Costanzo farms organically on Etna’s northern slope, where terraced volcanic soils and high elevations shape the estate’s fresh, mineral-driven style. 'Mofete' highlights the red-fruited lift and gentle spice of nerello mascalese and nerello cappuccio, native varietals to Sicily. Grapes were hand-harvested and fermented with native yeasts in stainless steel before spending 12 months in a blend of stainless steel and large oak casks. Bright acidity and a smoky mineral edge make this an easy match for grilled chicken, roasted pork, or pasta with red sauce.
