Now led by brothers Gabin and Félix Richoux, this longtime Irancy domaine farms steep limestone-marl slopes organically and biodynamically, producing some of the most precise pinot noir in the Auxerrois. 'Les Cailles' 2021 comes from 50+ year-old vines and shows red cherry, subtle florals, and the earthy lift typical of the site. Hand-harvested fruit ferments with native yeasts (occasionally with some stems) before aging in a mix of large oak barrels and stainless-steel. Serve at cellar temperature with roast chicken, charcuterie, or mushroom-driven dishes.
