Rootdown began in 2014 with a focus on organic farming and soil-first winemaking. In 2019, the winery became a partner in Cole Ranch which remains the smallest AVA in the United States. The ranch sits at higher elevation, and contains older plantings from the 1970s. For this wine Rootdown works with both Savagnin vert and Savagnin jaune grapes. The jaune adds aromatic lift while vert brings bright acidity. The wine is made in an ouillé style which means it is topped regularly and kept from oxidative development. Fermentation is done with native yeasts in neutral French oak and sulfur additions stay minimal. The style is lively, nutty, and mineral with a clean mountain feel.
