Stéphane Coquillette is a fourth-generation grower-producer in Chouilly, Champagne, carrying on a family tradition that stretches back to his grandmother. The Carte d’Or NV blends about two-thirds pinot noir with one-third chardonnay, offering bright orchard fruit, zesty citrus, and a stony minerality. Hand-harvested grapes are fermented in stainless steel with malolactic allowed, aged on the lees, and bottled with a gentle 5 g/L dosage. Fresh and precise yet slightly generous, it’s perfect with seafood, roasted chicken, or soft cheeses and makes a celebratory glass all on its own.
