Rising winemaker Clément Lavallée organically farms a very small parcel - just 0.22 hectares - of 35-year-old aligoté vines on clay-limestone soils in Chablis. Fermented with native yeasts in a combination of stainless steel and neutral barrels, this is bright, zippy, and mineral-driven. Pair with shellfish or a selection of fresh cheeses.
