Domaine Fontchêne is a small, biodynamically farmed estate in Les Baux-de-Provence run by René Milan. His Provençal rosé is made from a blend of the region’s typical varietals on clay-loam soils studded with galets roulés (large rounded stones that reflect sunlight and warmth, aiding in ripening) fermented cool and aged on fine lees for six months for texture. Lovely with Provençal fare - think seafood, grilled vegetables, and fresh salads.
